the latest and greatest kitchen creations

The latest recipes have been some of my favorite so far...and include: Shoo-fly Pie, Peach Galette, Lady Baltimore cake, Lemon Ice Box Pie, and Double Chocolate layer Cake w/ raspberries.

Shoo-fly Pie: aptly named, is all I can say. Its a Pennsylvania Dutch recipe dating back to long ago. If you are Pennsylvania Dutch, please forgive the next statement. ick. Its essentially a pie filled with molasses. To be fair, i don't really like molasses, which doesn't really give it a good shot. If you ever have a chance to try it, I would. you never know! you might like it!

Peach Gallete: By far, the most fun to make, because I got to overlap the crust, like you see in the picture. It wasn't that hard to make at all, once you make your pie crust. Next time, more sugary peaches! that was my favorite part.

Lady Baltimore Cake: I am so glad I was introduced to this cake. Gail, my mother-in-law, told me that she used to have it as a girl in Texas. That paired with the fact that I had never heard of it, created just enough interest and challenge for me to take it on. The best way I can describe this cake is a sugar cookie cake, i.e. a cake that tastes like sugar cookies!! and an icing that tastes like marshmallow cream! It seriously was one of the sweetest (and remarkably, one of the lightest) cakes I have ever had. DE-licious. definitely making it again.

Lemon Ice Box Pie. Although my taste testers enjoyed this one, I wasn't blown away. I wasn't displeased, but it didn't "wow" me. Neither does the picture I took. Should have taken it before we ate almost all of it! I did like the vanilla wafer crust as opposed to the normal graham cracker crust.

Double Chocolate Layer Cake w/ raspberries. wow. Rich, moist, and oh so chocolatey. The only thing surprising about this cake is that its low-fat. I still can't believe it. Honestly, it was so rich that I couldn't have handled it without the raspberries. They offered a nice off-set to the chocolate.

ok, that's it for now!! trying strawberry layer cake and and apple tart tomorrow!
